Mediterranean Hummus & Veggie Wrap
Wraps are the unsung heroes of weekday lunches. They're portable, endlessly adaptable, and impossible to mess up as long as you start with a good tortilla and don't overstuff. This version leans Mediterranean: a thick layer of homemade hummus acts as both filling and dressing, with crisp cucumber, juicy tomatoes, briny olives, and pickled red onions layered on top. The trick to a wrap that doesn't fall apart is to keep wet ingredients away from the tortilla — hummus first, then everything else.
Ingredients
- ☐ Large flour tortillas — 2, or gluten-free wraps
- ☐ Hummus — 1/2 cup, homemade or store-bought
- ☐ Cucumber — sliced thin, 1/2 cup
- ☐ Cherry tomatoes — sliced, 1/2 cup
- ☐ Roasted red peppers — sliced, 1/4 cup
- ☐ Kalamata olives — pitted and halved, 2 tablespoons
- ☐ Pickled red onions — 2 tablespoons
- ☐ Baby spinach — 1 cup
- ☐ Fresh parsley — 1/4 cup
- ☐ Fresh mint — 2 tablespoons
- ☐ Lemon — 1/2, juiced
- ☐ Olive oil — 1 teaspoon
- ☐ Sea salt and black pepper

Warm the tortillas in a dry skillet for 10 seconds per side, or microwave wrapped in a damp paper towel for 15 seconds. This makes them pliable and prevents cracking.
In a small bowl, toss the cucumber and cherry tomatoes with lemon juice, olive oil, salt, and pepper. Let sit for 2 minutes.
Lay a tortilla flat. Spread 1/4 cup of hummus across the surface, leaving a 1-inch border at the edges.
Layer half the spinach in a horizontal strip about one-third of the way up from the bottom edge. Top with half the cucumber-tomato mixture, roasted peppers, olives, pickled onions, parsley, and mint.
Fold in the left and right sides of the tortilla about 1 inch. Starting from the bottom, roll the tortilla tightly over the filling, tucking as you go, until you reach the top edge. The hummus will help seal the wrap shut.
Slice in half on the diagonal with a sharp serrated knife. Repeat with the second tortilla. Serve immediately, or wrap tightly in parchment paper for lunch on the go.
