Spicy Korean Gochujang Tofu Rice Bowl
I absolutely love this gochujang tofu rice bowl because it brings together so many wonderful textures and flavors in one satisfying meal. The crispy tofu provides a perfect contrast to the creamy, spicy sauce that coats every grain of rice. Each bite is an explosion of Korean-inspired flavors with just the right amount of heat that warms you from the inside out. It's become my go-to weeknight dinner because it's not only delicious but also comes together in under 30 minutes.
Ingredients
- ☐ firm tofu — 14 oz block, pressed and cubed
- ☐ brown rice — 1 cup, cooked
- ☐ gochujang — 3 tablespoons
- ☐ soy sauce — 2 tablespoons, low-sodium
- ☐ rice vinegar — 1 tablespoon
- ☐ maple syrup — 1 tablespoon
- ☐ toasted sesame oil — 1 teaspoon
- ☐ garlic — 2 cloves, minced
- ☐ ginger — 1 teaspoon, freshly grated
- ☐ spinach — 2 cups, fresh
- ☐ carrot — 1, julienned
- ☐ cucumber — 1/2, thinly sliced
- ☐ green onions — 2, thinly sliced
- ☐ sesame seeds — 1 tablespoon, toasted
- ☐ vegetable oil — 2 tablespoons

Press the tofu for at least 15 minutes to remove excess water, then cube into 1-inch pieces. In a large bowl, whisk together gochujang, soy sauce, rice vinegar, maple syrup, sesame oil, garlic, and ginger to create the sauce.
Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the tofu cubes and cook for 6-8 minutes, turning occasionally, until golden brown and crispy on all sides.
Pour the gochujang sauce over the tofu in the skillet and stir gently to coat. Reduce heat to medium and simmer for 3-4 minutes until the sauce thickens slightly and coats the tofu beautifully.
While the tofu is cooking, prepare the vegetables by julienning the carrot, slicing the cucumber, and chopping the green onions. Blanch the spinach in a small pot of boiling water for 30 seconds, then drain and rinse with cold water.
Divide the cooked brown rice between two bowls. Top with the spicy gochujang tofu, arranging the blanched spinach, julienned carrot, sliced cucumber, and green onions around the edges. Sprinkle generously with toasted sesame seeds and serve immediately.
For an extra kick, add a drizzle of sriracha or a sprinkle of crushed red pepper flakes. This bowl is best enjoyed fresh while the tofu is still crispy and the vegetables are crisp-tender.
Recipe notes
For a gluten-free version, use tamari instead of soy sauce. You can adjust the spice level by adding more or less gochujang according to your preference. This recipe works great with quinoa or cauliflower rice as a substitute for brown rice.
