Vegan Chocolate Trail Mix
I absolutely love creating this mix because it's the perfect balance of sweet, salty, and crunchy. The dark chocolate melts slightly in your mouth, while the nuts provide that satisfying crunch. It's become my go-to snack for when I need a quick energy boost without any guilt.

In a large bowl, combine all the nuts and seeds: almonds, cashews, pecans, pumpkin seeds, and sunflower seeds.
Add the dried cranberries to the nut mixture and stir gently to distribute evenly.
In a small saucepan, warm the maple syrup over low heat for about 1 minute until it becomes slightly runny, then stir in the cinnamon and vanilla extract.
Pour the maple syrup mixture over the nut mixture and toss thoroughly until everything is evenly coated.
Spread the mixture in a single layer on a parchment-lined baking sheet and let it cool for about 10 minutes.
Add the chopped dark chocolate to the cooled mixture and gently fold in to distribute without breaking the chocolate chunks too much.
Transfer the trail mix to an airtight container and store at room temperature for up to two weeks.
Serve in small portions for a perfect on-the-go snack that provides sustained energy and satisfies chocolate cravings.
Recipe notes
For a chocolatey twist, you can use cacao nibs instead of some of the dark chocolate chunks. This trail mix is naturally gluten-free and can be customized based on your preferences - feel free to add other dried fruits or seeds like dried cherries or chia seeds.
