In a shallow dish, whisk together the crumbled silken tofu, warmed almond milk, maple syrup, vanilla extract, ¾ teaspoon cinnamon, and optional nutmeg until smooth.
Heat the cooking oil in a large skillet over medium heat for 2 minutes until shimmering but not smoking.
Dip each slice of bread into the tofu mixture, allowing it to soak for about 20 seconds per side, ensuring both sides are evenly coated but not soggy.
Place the coated bread slices in the hot skillet and cook for 3-4 minutes per side until golden brown and crispy, pressing down gently with a spatula.
Sprinkle the remaining ¼ teaspoon of cinnamon over the cooked french toast while it's still hot in the pan, then transfer to plates and serve immediately with extra maple syrup if desired.
