No-Bake Vegan Energy Bites
Energy bites are the snack equivalent of having your life together. They take 15 minutes to make, require zero cooking, and live in your fridge for grab-and-go moments when you need something sweet but don't want a sugar crash. The base is oats and almond butter; the mix-ins are endlessly customizable. This version uses dark chocolate chips, shredded coconut, and chia seeds, but you could swap in dried cranberries, pumpkin seeds, or pistachios. Make a double batch — they disappear fast.

- ☐ Almond butter — 1/2 cup, creamy
- ☐ Maple syrup — 1/4 cup
- ☐ Ground flaxseed — 2 tablespoons
- ☐ Chia seeds — 1 tablespoon
- ☐ Vegan chocolate chips — 1/4 cup
- ☐ Shredded coconut — 1/4 cup, unsweetened
- ☐ Vanilla extract — 1 teaspoon
- ☐ Sea salt — 1/4 teaspoon
- ☐ Cinnamon — 1/2 teaspoon

In a large bowl, combine the oats, ground flaxseed, chia seeds, shredded coconut, cinnamon, and salt. Stir to mix evenly.
Add the almond butter, maple syrup, and vanilla extract. Stir with a spatula until the mixture comes together into a sticky dough. Fold in the chocolate chips last — the warmth of your hands will start melting them, so work quickly.
If the mixture feels too wet, add another tablespoon of oats. If it's too dry, add another tablespoon of almond butter or maple syrup.
Scoop about 1 tablespoon of dough and roll between your palms into a ball. Place on a plate or baking sheet lined with parchment. Repeat with the remaining dough.
Refrigerate the energy bites for at least 30 minutes to firm up. Transfer to an airtight container and store in the fridge for up to 2 weeks, or freezer for up to 3 months.
Recipe notes
For a nut-free version, swap the almond butter for sunflower seed butter.
