  1. Preheat your oven to 350°F (175°C) and lightly grease a donut pan with non-stick spray.

  2. In a medium bowl, whisk together the sifted flour, cane sugar, baking powder, baking soda, pumpkin pie spice, cinnamon, nutmeg, and salt until well combined.

  3. In a separate bowl, combine the pumpkin puree, plant milk, apple cider vinegar, and vanilla extract, stirring until smooth and slightly frothy, about 1 minute.

  4. Pour the wet ingredients into the dry ingredients and fold gently with a spatula until just combined; be careful not to overmix as this can make the donuts tough.

  5. Transfer the batter to a piping bag or a large ziplock bag with the corner cut off, then pipe the batter into the prepared donut pan, filling each cavity about two-thirds full.

  6. Bake for 10-12 minutes, or until the donuts spring back when lightly touched and a toothpick inserted comes out clean; the tops should be slightly golden.
