Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Pat the chickpeas thoroughly dry with a paper towel - this is crucial for maximum crispiness.
In a large bowl, toss the dried chickpeas with olive oil until evenly coated.
Add all the spices, salt, and pepper to the bowl and toss again until the chickpeas are well-seasoned.
Spread the seasoned chickpeas in a single layer on the prepared baking sheet, making sure not to overcrowd them.
Roast for 30-40 minutes, shaking the pan every 10 minutes for even cooking, until the chickpeas are golden brown and crispy.
Remove from the oven and let them cool completely on the baking sheet - they will get even crispier as they cool.
Once completely cool, transfer to an airtight container and store at room temperature for up to one week.
