Crispy Spiced Roasted Chickpeas

I absolutely love how these chickpeas transform from humble legumes into something extraordinary. The moment they come out of the oven, your kitchen fills with this warm, inviting aroma that makes you want to grab handful after handful. They're incredibly addictive yet wholesome - the perfect balance of spicy, savory, and satisfying that keeps you coming back for more.

Instructions

Tap a step to mark it complete as you cook.

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

  2. Pat the chickpeas thoroughly dry with a paper towel - this is crucial for maximum crispiness.

  3. In a large bowl, toss the dried chickpeas with olive oil until evenly coated.

  4. Add all the spices, salt, and pepper to the bowl and toss again until the chickpeas are well-seasoned.

  5. Spread the seasoned chickpeas in a single layer on the prepared baking sheet, making sure not to overcrowd them.

  6. Roast for 30-40 minutes, shaking the pan every 10 minutes for even cooking, until the chickpeas are golden brown and crispy.

  7. Remove from the oven and let them cool completely on the baking sheet - they will get even crispier as they cool.

  8. Once completely cool, transfer to an airtight container and store at room temperature for up to one week.

Recipe notes

For extra crispiness, make sure to thoroughly dry the chickpeas after rinsing. You can customize the spice blend to your preference - try adding rosemary, thyme, or even nutritional yeast for a cheesy flavor.
