Fluffy Vegan Tofu Scramble
Tofu scramble is one of those quiet miracles. With a handful of pantry spices and ten minutes, you get something that satisfies the same itch as scrambled eggs — soft, savory, almost custardy in places, flecked with bright herbs. Nutritional yeast gives it a cheesy backbone, kala namak (black salt) adds the sulfurous egg flavor, and turmeric paints everything a sunny yellow. Pile it on toast, fold it into a wrap, or eat it straight from the pan.
Ingredients
- ☐ Firm tofu — 14 oz block, drained
- ☐ Nutritional yeast — 2 tablespoons
- ☐ Turmeric — 1/2 teaspoon
- ☐ Kala namak (black salt) — 1/2 teaspoon, optional but recommended
- ☐ Garlic powder — 1/2 teaspoon
- ☐ Onion powder — 1/2 teaspoon
- ☐ Unsweetened plant milk — 2 tablespoons
- ☐ Cherry tomatoes — halved, 1/2 cup
- ☐ Baby spinach — 1 packed cup
- ☐ Red onion — finely diced, 1/4 cup
- ☐ Olive oil — 1 tablespoon
- ☐ Fresh chives — for garnish
- ☐ Sea salt and black pepper

Crumble the tofu with your hands into a bowl — aim for the texture of scrambled eggs, with a mix of small and larger curds.
In a small bowl, whisk together nutritional yeast, turmeric, kala namak, garlic powder, onion powder, plant milk, and a pinch of regular salt. Pour over the tofu and toss gently to coat.
Heat olive oil in a large non-stick skillet over medium heat. Add the red onion and cook for 3 minutes until softened.
Add the tofu mixture to the pan. Cook undisturbed for 2-3 minutes to develop golden crust on the bottom, then gently fold with a spatula. Continue cooking for 5-6 more minutes, folding occasionally, until tofu is heated through and lightly browned in spots.
Stir in cherry tomatoes and cook for 1 minute. Add spinach and fold gently until just wilted, about 30 seconds.
Taste and adjust salt and pepper. Serve immediately, garnished with fresh chives. Excellent on sourdough toast or wrapped in a warm tortilla.
